Spread across the first floor of the Clubhouse and out onto its impressive wraparound terrace, with spectacular views over the resort’s manicured greens and lakes, The Palmer is all about relaxed destination dining, informal and effortlessly modern.
Luxuriously fresh and contemporary but reassuringly classic, The Palmer serves a bright and early breakfast, leisurely lunch and dinner every evening all the way through to last orders.
The Palmer’s cosy glazed terrace has both a retractable roof and roll-down glass panels so you always benefit from the very best of the weather, as well as a series of fire pits for guests to enjoy a pre-dinner drink or a nightcap beside as evening falls over the estate.
Food at The Palmer is contemporary comfort food, where quality ingredients, simply and elegantly prepared, are at the heart of every menu. Head Chef Andy Nolan brings a wealth of experience to The Palmer. He joined The Shelbourne back in 2010 initially, progressing from Commis Chef to Chef de Partie, after which he left to gain experience working and staging in some of Dublin and London’s best restaurants including Chapter One, The Greenhouse, L’Autre Pied and Tom Aikens Chelsea. Andy returned to the Shelbourne in 2014 as Sous Chef, becoming Chef de Cuisine of The Saddle Room Restaurant which was awarded Dublin’s Best Hotel Restaurant during his tenure, and then became Executive Sous Chef, overseeing the wide variety of dining outlets at the hotel.
The focus at The Palmer is on modern comfort food, from classic dishes to flatbreads, sharing plates, fresh salads and fish, great food from the grill and lots of generous and delicious sides. The Palmer takes a sunny and satisfying approach to produce-led dishes in a luxurious but informal atmosphere.
Flooded with light from the floor to ceiling windows during the day and beautifully lit at night, The Palmer’s comfortable banquettes and club chairs in pale blues and dove greys, bright panelled walls, classic herringbone parquet floors and lush carpets, polished brass accents, artfully foxed mirrors and pools of glowing light from lamps make the place feel timeless.
Inviting, vibrant, serving modern food all day long, The Palmer is the perfect spot for a bright and buzzy breakfast meeting, to while away the afternoon sharing some grilled skewers and flatbreads with a few glasses of fresh and zingy rosé in the sunshine, or dressing up for date night with cocktails on the terrace and a classic sole meunière or a fine steak from the grill.
